Tips

Any time you make changes to a quotes you should always get a revised copy to your customer for confirmation. If and when the quote and all of the details have been finalized have them sign a printed copy as confirmation. Don't have them sign off on a bunch of scribbled changes - only an official printed copy. This is the best way to avoid confusion and conflict.

Do not finalize a quote (by starting the payment process) until you have the signed confirmation. Once you finalize it no further changes can be made.

Details

A quote is not actually recorded as a sale or entered into your sales figures until you finalize it by beginning the payment process. This means that if you are quoting on an event that is months away you may want to hold off on finalizing it so as to avoid skewing your sales figures.
